Keto Friendly Lasagna


4 cups (32oz) Ricotta Cheese

3/4 cup (6 oz) Parmesan Cheese (grated)

1 1/2 cups (12oz) Shredded Mozzarella Cheese

2 eggs

1 lb ground beef

Two 24oz jars of spaghetti sauce

1 package of heart of palm lasagna noodles (Palmini Hearts of Palm Lasagna noodles)


Preheat oven to 400F

Blend Ricotta Cheese and 1/2 cup of the Parmesan and two eggs in a mixing bowl and set aside

In a 4 qt saucepan, cook the ground beef until brown and season with salt and pepper
Drain any grease from the ground beef
Add the two jars of sauce

In a 13x9x2 casserole baking dish, Spoon in approximately 2 cups of the meat sauce
Top with half of the Lasagna noodles
Spoon in half of the Ricotta cheese
Sprinkle in half of the shredded mozzarella cheese
Spoon in 2 cups of the meat sauce
Top with the remaining Lasagna noodles
Spoon in the remaining meat sauce
Cover with the remaining shredded mozzarella cheese

Bake at 400F for 30 minutes.
Remove from the oven and let stand for 10 minutes before serving.
