Chicken Smothered with Mushrooms and Spinach


4 breasts of boneless, skinless chicken

8 ounces cream cheese

1 - 0.7oz packet of Zesty Italian Dry Salad Dressing and Recipe Mix

8 ounces of fresh spinach

8 ounces of fresh mushrooms, sliced

1 large onion, cut lengthwise

1 1/2 cups shredded mozzarella provolone parmesan blend cheese

1 teaspoon salt

1 teaspoon of pepper


Preheat the oven to 350 degrees.

Oil a small to medium pan. 

Cook the onions until caramelized. 

Add the mushrooms to the pan and cook until the mushrooms are slightly browned.

Add the fresh spinach to the pan.

In a mixing bowl, combine the cream cheese with the Zesty Italian Dressing packet until well combined. 

Place the chicken breasts into casserole dish.

Divide the cream-cheese mixture into four equal portions and spread them on top of each chicken breast. 

Spread the onion, mushrooms and spinach evenly over the chicken.

Season the mixture with salt and pepper.

Cover it with the mozzarella, provolone, and parmesan blend cheese.

Place in oven.
Bake 30 minutes.
