Keto Friendly Mealtoaf Stuffed Peppers

  Ingredients for Meatloaf Stuffing:

1 lb ground beef

2 eggs

1 finely chopped medium onion

1/2 cup of shredded sharp cheddar cheese

1/4 cup parmesan cheese

1/4 cup almond flour

1 TBSP minced onion

1 TBSP olive oil

1 TSP dried oregano

1 TSP chili powder

2 TSP salt

1/2 TSP ground black pepper

Ingredients for Remainder:

4 large bell peppers
1 cup sugar free ketchup


combine ingredients in a large mixing bowl and mix. 

wash and slice bell peppers scrape out ribs and all seeds.

spread 1 TBSP of sugar free ketchup inside each bell pepper half

fill bell pepper halves with meatloaf stuffing

spread 1 TBSP of sugar free ketchup over the top of the meatloaf stuffing in each bell pepper half

bake at 400F for 45 minutes
