Mom's Red Velvet Cake


Ingredients:
1 ounce red food coloring
3 eggs
2 tablespoons cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon white vinegar
1 cup buttermilk
1 1/2 cups mazola oil
2 1/2 cups plain flour
1 1/2 cups white sugar
1 teaspoon vanilla

Directions:
Sift dry ingredients except sugar together
mix in sugar and oil
mix in beaten eggs
add red food coloring and vanilla
mix buttermilk, vinegar, and soda in a separate mixing bowl
alternate adding dry ingredients with buttermilk mixture while mixing
grease two 9 inch cake pans
pour batter in cake pans
bake at 350F 30 minutes or until done

Icing

Ingredients:
1 stick butter
1 - 8 ounce package of cream cheese
1 box of powered sugar
1 teaspoon vanilla 
optional: 1 cup of chopped pecans (pronounced PEE-CAN-Z)

Directions:
lightly cream butter and cream cheese
mix in remaining ingredients
